I am a cooking director, a host, plus an expediter.
This means that I don’t cook, but I am the boss of all the line cooks, so it’s my job to keep everything running smoothly.
I make the work schedule, I supervise the line cooks, plus I also manage the waitress staff to make sure our customers stay content. It is an undoubtedly difficult job, but it’s a work of love! I have gained wisdom that a single 1 of the most crucial aspects of managing the living room is ensuring correct ventilation plus excellent temperature control. When the cooling doesn’t work it makes the chefs hot, covered in sweat, plus irritable, and this does not translate to nice cooking. Ventilation is even more crucial because without that the back room begins to aroma, plus it ruins the indoor air pollen levels for the entire restaurant. Nobody wants to go out for a nice meal only to have to grimace over the bad aroma plus air quality of a dining hall with no ventilation. I know a local Heating plus A/C tech who works with my restaurant on a biweekly basis. Her name is Ronda, plus she is moonlighting with us as a fifth job. Her day job is with a sizable cooling system contractor, but I pay Ronda under the table to perform basic cleaning, repair, plus upkeep for our ventilation system. My back room team keeps the cooking areas wash plus neat at all times, plus Ronda makes sure the ventilation plan is just as clean! Without Ronda’s biweekly ductwork plus exhaust plan cleanings, the food my staff and I make wouldn’t be nearly as tasty.
